Resep Masakan Jepang: Okonomiyaki Original Halal

¡¡I am from Osaka. In Osaka, Okonomiyaki is a very popular food. There are many Okonomiyaki restaurants in town and each of them proudly make their own tasty Okonomiyaki. However, there are no Okonomiyaki restaurants in Nagano. Well, there are a few, but they don't taste too good to me. That is why I decided to make it at home. At first, I could not make good Okonomiyaki; however, as I tried many times to improve it, I was finally able to make my own delicious Okonomiyaki. Now, I invite my students to my house for Okonomiyaki and they say"it is delicious"(May be my presence influences their judgment).
¡¡By the way, I often travel around the country due to my work, and I noticed that other than the Kyoto-Osaka area and Hiroshima, Nagano was not the only place in all of Japan that didn't have good Okonomiyaki restaurants. Since I want you to enjoy Okonomiyakithat tastes good, I am going to tell you how to make my special Okonomiyaki.

Ingredients

Usually, I don't precisely measure the ingredients by weight. I just know how much to put in without weighing; however, this time I measured the amount that I usually use to tell you exactly how much of the different ingredients you need. By the way, this recipe is for five people. You need:


  • One big Chinese yam (it is available at Asian markets)
  • 160 grams of flour ¡¡
  • 200 grams of ground meat/beef for halal recipe
  • one cabbage
  • half of a green onion
  • one squid
  • a hand full of dried shrimps
  • 6 eggs
  • and about one cup of tenkasu(it is available at Asian markets)
  • For the sauce, you need
    • instant dashinomoto(it is available at Asian markets)
    • mayonnaise
    • wouchester sauce
    • mustard
    • and soy sauce
¡¡Keep in mind that there will be less flour than Chinese yam. The Okonomiyaki introduced here is not only fried with water and flour; the flour will only be used as a glue to stick all the ingredients together. The base is the Chinese yam. We don't use any water. Restaurants which serve bad Okonomiyaki add only a small amount of Chinese yam for seasoning and put in too much flour. If you cook this way, your Okonomiyaki will turn out to be too hard. A tasty Okonomiyaki needs to be crunchy on the outside and moist inside.
¡¡Ground pork is also an important part of this recipe. You should not use expensive red meat. Please use the thin sliced meat that has an equal amount of fat and red meat.
¡¡Do you know what tenkasuis? It is a fried mixture of flour and water that is left after frying tempura. Please make sure that you have it. Around the area where I came from, the tempura stores in the market places often sold it for a cheap price. How about your town? In Nagano, it is sold in bags at super markets. Please find where it is sold.

Preparation

  1. Mix theflourandeggswell. Be very careful not to put too much flour in the mixture. As a reminder, we don't use any water.
  2. Mix the ground Chinese yam into the mixture.
  3. At this point, you need to put a small amount of instant dashinomoto¡¢mayonnaise, and soy sauceNext, you need to cut the cabbage into small pieces (you do not need to slice it too thin) and add them to the mixture. You may think that there are too many pieces of cabbage in the mixture, but you will need a lot. If you stir thoroughly, it will mix readily with the other ingredients. Okonomiyaki is a healthy food with a lot of vegetables in it.
  4. Next, thin slices of green onion and STRONG>squid should be mixed into the mixture. After stirring for a while, add the dried shrimps and tenkasu.
  5. Finally, you need to fry it. Okonomiyaki should be crunchy on the outside and moist inside. To make it so, you will need a well heated hotplate. Luckly, most hotplates can heat more than 200cel. these days. In my home, I use a hotplate that is heated by the gas.
  6. Spread some cooking oil on the heated hotplate and put the mixture on it. You may fry as much mixture as you desire. However, you should not spread it too thin. This Okonomiyaki mainly contains the Chinese yam; therefore, it easily gets separated. Spread a thick layer of the mixture in the center of the hotplate and prevent it from getting separated. Next, spread the chopped meat on it.
  7. When one side of the mixture is cooked, turn it over. Make sure that the side on the pan has turned light brown before you turn it over. Check a few times to see if it is done. The trick in turning it over is the timing and speed. When the mixture is not cooked enough, it will break apart while you are flipping it over. You can prevent this from happening by making sure that one side is completely cooked. Also, if you flip it too slowly, it will break apart on the spatula. Have two big spatulas ready and turn it over quickly. After turning it over, press the mixture gently and make sure that the entire surface of the mixture has contact with the hotplate.
  8. Again, make sure that the other side is cooked well. After it is cooked, turn it over again with the side of ground meat on top and turn off the hotplate.
  9. Spread the mayonnaise,two sauces, and mustard according to your preference. Cut it into small pieces. Finally, please eat it when it is still warm. You do not have to put mayonnaise on it, but you may want to try it at least once.

Resep Minuman Jepang: Barley Tea

Ingredients:




Servings: 2 cups

2 ounces roasted barley (1/4 cup)
1 1/2 pints water
honey, can be added to help sooth sore throat
lemon, can be added to help sooth sore throat

Directions:

Prep Time: 5 mins

Total Time: 11 mins

1 To make plain barley water ? put two ounces of barley into a small saucepan along with 1-1/2 pints of water.
2 Bring to a boil.
3 Reduce heat, cover and simmer for 6 minutes.
4 Strain through cheesecloth, forcing out all the juice.
5 Barley water is a very nutritious cooling drink that helps bring down fever.
6 It is also useful for those suffering from bronchitis and asthma.
7 To Roast barley(use pot or pearl barley?pearled barley being more refined than pot barley but making no difference to the tea).
8 In a hot a cast iron skillet until a drop of water sizzles when dropped into pan.
9 Measure barley into a sieve and rinse under cold running water.
10 Towel dry.
11 Put barley in skillet and dry roast, stirring constantly with a wooden spoon for even toasting, until it turns golden.
12 Over-roasting will produce a coffee-like drink!
13 To make a caffeine-free coffee substitute, roast the barley until it is brown.
14 Cool and grind.
15 Then roast again until fragrant and very dark-- but not burnt.
16 Use in place of regular ground coffee, experimenting with amounts until desired strength is reached.

Resep Masakan Jepang: Somen Summer Food


 

Ingridients: (for 4 servings)
300 grams somen, 5 yakumi (Sengiri shiso, sengiri myoga, koguchigiri Green onion, grated ginger, white sesame (roasted and lightly grated)), Soup for somen (1/3 cup mirin(change with lemon+grapefruit juice for halal recipe), 2cups water, 1/3 soy sauce, 20 grams katsuobushi flakes).


How to make: How to boil Somen:

Boil a lot of water in a large deep pot. Spread somen into itB
Keep heating with high flame while stir with chopstick lightly.
When it come to a boil, add a little water to prevent overflowing. Do not add too much at one time or temperature will drop.
When it come to a boil again stop heat, place it on the strainer immediately.
Rinse and wash by hand with running cold water to remove starchiness and oil.

Preparing soup for Somen:

Put mirin in a pot, bring to a boil then stop heat. (nikiru)
Add soy sauce with water in a pot bring to a boil (hitonitachi), add katsuobushi, simmer for 1 to 2 minutes.
Let cool down,strain with thin cloth or kitchen towel on top.

Hints:

Nikiru means removing alcohol by boiling it.

Hitonitachi means lightly boiled.

Use cotton string to tie the end of somen together when boiling. It makes it easier to serve somen decoratively on dishes. Somen can be boiled evenly inside and tightly on the surface (aldente) by adding water to lower the temperature when somen is boiling. So that somen doesn't absorb any odor from your hands, be sure to rinse with running cold water to cool down before touching. Somen is made with kneaded wheat flour, stretched into thin strips using vegetable oil. There are 1 year somen or 3 years somen. Oil content decreases as time passes and texture becomes smoother years after made. Colored from shiso, plum, egg, green tea somen can be boiled in a short time. Wash these kinds of somen particularly carefully by hand to remove odor of oil. There is no need to wash 3 year somen by hand, just rinse. Somen yellowed or moulded are too old to use. Keep somen in a closed can, store it in cool and dark place. If somen is more than 1 year old dry under the sun to help remove odor.

Resep Masakan Jepang: Tuna Salad Sushi Roll Fusion ALA Sushi Tei

It's a sushi roll made with tuna salad. It's good to make your favorite tuna salad and use as the filling.
 
Tuna Salad Rolls
Ingredients:

4 cups sushi rice, prepared
4 sheets of nori (dried seaweed)
1 Tbsp finely chopped onion
2/3 cup canned tuna
1 Tbsp mayonnaise

Preparation:
Mix chopped onion, tuna, and mayonnaise in a bowl, or mak tuna salad as you like. Put a nori sheet on top of a bamboo mat (makisu). Spread sushi rice on top of the nori sheet. Place the tuna salad horizontally on the rice. Roll up the bamboo mat, pressing forward to shape the sushi into a cylinder. Press the bamboo mat firmly and remove it from the sushi. Cut the sushi roll into bite-size pieces.
* If you prefer it to be spicy, add some karashi mustard in the tuna salad.

Makes 4 rolls.

Resep Masakan Jepang: Itoko Don


You probably know about oyako don (parent & child bowl) that's made with chicken and eggs, but you probably haven't had itoko don (cousin bowl) that's made with beef and eggs. So I thought it might be useful to post the recipe.

4 cups hot cooked rice

1 1/2 cups water
150 g. thinly sliced beef
1 bamboo shoot, slivered
1/2 round onion, cut into thin slices

1-2 tsp sugar
1 tbsp soy sauce
1/8 cup mirin/ change with grapefruit+lemon juice for halal recipe (because mirin is non-halal)

1/8 cup minced green onion
2 eggs, beaten

Boil water, then add beef, bamboo, round onion, and middle 3 ingredients listed above. Simmer 1-2 min.

Add green onion, pour beaten egg over beef mixture. Cover and cook 1/2 min.

Divide over individual bowls of hot rice. Garnish with nori, if desired. Approx. 2 servings.

Alternatif pengganti Angciu dan bahan-bahan beralhokol pada masakan

Ada beberapa menu masakan sea food yang biasa di pesan dirumah makan sea food, yaitu sop ikan, ikan bakar, tumis kangkung, baby kaylan, udang goreng tepung, cah taoge ikan asin, sotong goreng tepung, Cap Cay. Biasanya makanan yang proses masakannya dengan ditumis, tak lepas dari angciu yaitu bumbu masakan cina yang artinya adalah arak merah. Angciu bukanlah suatu bahan tambahan atau bumbu yang ditambahkan alkohol melainkan angciu sendiri adalah artinya arak merah dalam bahasa cina. Jelas sekali kalau arak adalah jenis khamar yang kadar alkoholnya sangat tinggi. jadi seandainya ingin makan di sebuah restaurant yang menghadirkan makanan tersebut diatas, pastikan mereka tidak menggunakan arak tersebut. Biasanya ciri-ciri rumah makan yang menggunakan angciu adalah pada saat memasak akan timbul nyala api yang cukup besar. Ada yang mengatakan bahwa bumbu yang hanya ditambahkan sedikit saja tidak mengharamkan makanan tersebut. Padahal jelas dalam Alquran tidak ada ayat yg menyebutkan bahwa boleh ataupun halal mengkonsumsi alkohol sedikit misalnya 1 % ???? So..
Penggunaan angciu ini biasanya hanya sekedar sebagai aroma agar makanan tersebut tercium kelezatannya. Oleh karenanya sudah banyak rumah makan dan koki-koki yang sadar akan kehalalan, segera menggantikan angciu dengan air jahe segar atau bisa juga kecap asin yang ditambah dengan perasan air jeruk nipis atau lemon.
kalau untuk restaurant jepang biasanya mereka menggunakan sejenis mirin atau sake (sejenis arak)untuk bumbu masakannya. Biasanya jarang restaurant jepang yang tidak melepaskan bumbu mirin ini. Jadi Restaurant Jepang yang belum mendapatkan sertifikat halal biasanya kebanyakan memang masih menggunakan bumbu ini. Jika Masakan cina yang sudah banyak dihidangkan dirumah makan pinggir jalan/pujasera ataupun food court bisa diakali dengan bumbu-bumbu alami yang lain, untuk masakan jepang agak sulit. karena masakannya pun jarang dikonsumsi khalayak ramai sebagaimana masakan sea food ala cina (penulis mengatakan demikian karena budaya masakan cina memang sudah mendarah daging di Indonesia) dan kebanyakan di daerah-daerah yang mempunyai menu masakan yang berbeda-beda, masakan sea food ala cina ini pun sudah dimodifikasi sedemikian rupa sehingga penyajiannya pun juga berbeda-beda.
Beberapa alternatif pengganti bahan-bahan tambahan yang beralkohol :
Ang Ciu : Alternatifnya adalah campuran kecap asin dan perasan jeruk limau.
Mirin : Alternatifnya adalah jus anggur yang dicampur dengan perasan air jeruk lemon.
Red Wine : Alternatifnya adalah jus anggur, jus cranberry dan jus tomat.
Bourbon : Alternatifnya adalah ekstrak vanilla, jus cranberry atau jus anggur.
Brandy : Alternatifnya adalah sirup buah cerry atau selai cerry.
Muscat : Alternatifnya adalah jus anggur yang ditambah dengan air dan gula putih.
Vodka : Alternatifnya adalah sari buah apel atau jus anggur dicampur dengan perasan jeruk nipis.
White brandy : Alternatifnya adalah anggur, sari buah apel, kaldu sayuran maupun air biasa.
Apple Brandy : Alternatifnya adalah jus apel tanpa pemanis

Resep Gyuniku dan Tofu Shichimiyaki

Bahan :

* 300 gram tofu
* 80 gram daging iga sapi, iris
* 50 gram tonggarashi (bubuk cabai kering)
* 10 ml sake (arak khas jepang)
* 10 ml mirin (bumbu dapur khas jepang yang mengandung sedikit alkhohol, berwarna kuning dan terasa agak manis)
* 10 gram Dasinomoto (bumbu kaldu khas jepang)

Cara membuat :

1. Tofu dipotong menjadi 6 bagian, lalu dipanggang diatas pan (penggorengan) dengan campuran bumbu sake, soyu, mirin, dasinomoto, tonggarashi, dan irisan daun bawang. aduk sejenak dan biarkan hingga matang
2. Angkat dan sajikan di dalam hot plate.

Resep Takoyaki (It's YummY)

Tako means octopus in Japanese, and takoyaki are known as octopus balls. Takoyaki venders are very popular in Japan. To make takoyaki, a grill pan for takoyaki is used. The pan has many small cups to pour the batter.

* 1 2/3 cup flour
* 2 1/2 cup dashi soup
* 2 eggs
* 1/2 lb. boiled octopus, cut into bite-size pieces
* 1/4 cup chopped green onion
* 1/4 cup dried sakura ebi (red shrimp)
* 1/4 cup chopped pickled red ginger
* *For toppings:
* katsuobushi (dried bonito flakes)
* aonori (green seaweed powder)
* Worcestershire sauce or takoyaki sauce
* mayonnaise

Preparation:
Mix flour, dashi soup, and eggs in a bowl to make batter. Thickness of the batter should be like potage soup. Put oil inside cups of a takoyaki grill pan. Pour batter into the cups to the full. Put octopus, red ginger, and green onion in each hole. Grill takoyaki balls, turning with a pick. When takoyaki become rounds and brown, remove them from the pan and place in a plate. Put sauce and mayonnaise on takoyaki and sprinkle bonito flakes and aonori on the top.

Takoyaki (octopus balls) biasanya dijual sebagai jajanan kaki lima, namun jajanan ini dapat juga dibuat di rumah. Apapun itu, hal terpenting adalah bila Anda memiliki takoyaki grill (takoyaki-ki), akan memudahkan Anda membuat takoyaki.

Asal muasal takoyaki

Awalnya, takoyaki atau octopus balls hanyalah snack bulat berdiameter 3-5 cm yang diisi dengan potongan gurita di dalamnya, disajikan dengan saus. Takoyaki ini dijual menggunakan tusukan bambu berisi 3 bulatan per tusuknya, saat membeli kita bisa melihat aksi penjualnya yang asik mombolak-balik takoyaki di atas wajan hingga berbentuk bulat dan matang.
Dalam penyajiannya, takoyaki selalu dijual dalam bentuk porsian. 1 porsi biasanya berisi 3-10 buah dalam 1 wadah, yang selalu disertakan tusuk gigi atau sumpit sekali pakai. Di negeri asalnya takoyaki biasa dijual dalam wadah berbentuk perahu.

Takoyaki sangat tenar di Jepang, khususnya Kansai, Tokyo dan Osaka. Snack mungil ini paling nikmat bil disantap dalam keadaan panas sebagai camilan, dan saat ini di Jepang takoyaki sudah dapat dibeli dalam kondisi beku (frozen), sehingga pembeli tinggal memanaskan dalam microwafe.
Bahkan tiap rumah di Osaka biasanya memiliki wajan (loyang) takoyaki. Takoyaki digunakan sebagai makanan kebanggaan, yang sering dijadikan lauk untuk makan nasi putih. Bahan-bahan untuk membuat takoyaki tersedia secara lengkap di toko.
Wajan takoyaki merupakan salah satu perabot rumah tangga yang seharusnya dihadiahkan orangtua kepada anak perempuan yang menjadi pengantin.
Bahan asinan jahe berwarna merah (benishoga) sering pula dicampurkan ke dalam adonan. Penjual yang senang berkreasi kadangkala menambahkan keju atau konnyaku ke dalam takoyaki.
Saus yang dipakai biasanya adalah saus okonomiyaki walaupun ada juga saus khusus untuk takoyaki yang rasanya tidak jauh berbeda dengan saus okonomiyaki.
Takoyaki dengan isi yang disukai penduduk setempat (kadang-kadang tanpa gurita) berusaha diperkenalkan di negara-negara yang penduduknya merasa ngeri memakan gurita.
Saat ini, kita dapat menjumpai takoyaki dijual dengan pilihan isi dan disajikan dalam wadah cup kertas, kantung kertas maupun box mungil.

Bahan dan alat

Takoyaki-ki : sebutan untuk wajan dengan bulatan-bulatan cekung yang berfungsi sebagai loyang sewaktu memasak takoyaki.

Tusuk besi dengan pegangan dari kayu/tusuk sate : digunakan untuk membolak-balik adonan hingga menjadi bulat benar.
Tepung terigu : gunakan tepung terigu protein rendah agar hasilnya putih, lebih lunak dan gurih.

Konnyaku : sejenis jelly yang kaya akan serat. Digunakan sebagai variasi isi takoyaki.

Benishoga : asinan jahe (sushi gari) yang dicincang, digunakan untuk menambahkan citarasa pedas dan asam pada takoyaki.

Konbu/kombu : ganggang laut (rumput laut) yang berbentuk lembaran. Digunakan sebagai bahan dasar kaldu (dashi). Ada juga yang berfungsi sebagai lapisan pana tarabagani sushi (capit kepiting besar).

Tenkasu : cereal berjenis rice crispy berfungsi untuk menambah rasa krispi pada takoyaki.

Katsuo-bushi : dibuat dari ikan cakalang. Ada 2 jenis yaitu bubuk dan lembaran serat berwarna kecoklatan. Digunakan untuk pendamping pada masakan Jepang serta dapat digunakan sebagai bahan kaldu.

Saus okonomiyaki : saus yang digunakan untuk okonomiyaki (jenis masakan teppanyaki) sebagai lauk biasanya berasa pedas manis.

Tips membuat takoyaki

Saat mencampur adonan, cukup diaduk hingga rata agar adonan tidak terlalu mengembang sehingga didapatkan bentuk ideal yaitu bulat sebesar bola pingpong.
Pastikan cetakan takoyaki panas benar untuk membentuk tekstur yang bagus.
Konbu dapat diganti dengan rebusan kepala udang.

Resep Takoyaki (Octopus Balls)

Bahan isi takoyaki :

  • Baby octopus (bayi gurita) 200 gram, rebus dan cincang
  • Tenkasu (rice crispy) secukupnya

Bahan adonan dasar takoyaki :

  • Air 400 ml
  • Konbu 10 cm, potong selebar 2 cm
  • Katsuo-bushi 15 gram
  • Tepung terigu protein rendah 200 gram
  • Putih telur 4 butir
  • Kuning telur 2 butir
  • Margarin 2 sendok makan

Pendamping takoyaki :

  • Bulldog saus 50 ml
  • Saus inggris 25 ml
  • Mayones 50 gram
  • Benishoga (acar jahe) secukupnya

Cara membuat adonan dasar takoyaki :

  1. Masukkan konbu dalam panci, masak di atas api kecil. Angkat beberapa saat sebelum air mendidih.
  2. Campur katsuo-bushi dalam air rebusan konbu sambil di aduk selama 2 menit. Saring dan dinginkan.
  3. Campur terigu, telur dan garam. Tuang air kaldu, aduk hingga rata. Sisihkan.

Cara membuat takoyaki :

  1. Tuang adonan takoyaki pada cetakan yang sudah diolesi dengan margarin hingga penuh.
  2. Taburi bagian atasnya dengan rice crispy dan masukkan baby octopus (bayi gurita). Masak di atas api kecil.
  3. Bila sudah setengah matang, balik adonan dengan bantuan tusuk sate/ tusuk besi.
  4. Masak hingga berwarna kecoklatan. Angkat dan sajikan bersama saus pendamping dan benishoga.

resep sup miso

Bahan- bahan :
* 1 liter kaldu ayam
* 1 buah tahu, ukuran besar, potong bentuk dadu
* 4 sendok makan miso
* 2 batang daun bawang, iris halus

Cara Buatnya:
Didihkan kaldu ayam, masukkan miso, aduk rata, lalu didihkan kembali.
Masukkan tahu, aduk rata, masak hingga matang, angkat dari api, lalu taburi dengan daun bawang.

Resep Torikatsu (Ayam panir khas Jepang hoka hoka bento)

Kalo kita makan di hoka hoka bento (hokben),
tentu tidak asing lagi dengan hidangannya yang bernama torikatsu.

Yummy dan enak banget, hehe

tahukah anda , kalo kita dapat membuat hidangan tersebut sendiri di rumah kita?

torikatsu

Bahan:

* 600 gram dada ayam fillet
* 3 butir telur
* 1 batang daun bawang, iris halus
* 150 gram tepung panir (tepung roti) kasar
* Minyak goreng secukupnya

Perendam:

* 3 sendok makan kecap shoyu (bisa diganti dengan saus tiram)
* 1/2 sendok teh penyedap rasa, jika suka
* 2 siung bawang putih, cincang
* 1 sendok teh cabai bubuk
* 2 sendok teh saus tiram

Pelengkap:

* 1 buah tomat, potong-potong
* 150 gram lettuce, iris tipis
* 150 gram mayonnaise

Cara membuat:

1. Campur dada ayam dengan bahan perendam, diamkan 20 menit agar bumbu meresap.
2. Kocok telur dan daun bawang. Aduk rata.
3. Celupkan ayam ke tepung panir. Simpan dalam lemari pendingin selama 15 menit.
4. Panaskan minyak, goreng hingga kuning kecokelatan. Angkat, tiriskan.
5. Potong-potong di piring, hidangkan selagi panas bersama pelengkap.

Lebih nikmat lagi bila disajikan bersama potongan kubis dan acar wortel, trus makannya makek sumpit. hemmm.. Yummmyyyy...
